Happy Thanksgiving!

How was your Thanksgiving holiday? Mine was exhausting, but fabulous! I  worked this morning, from 7 am until 4 pm today. It was a lot of work too! The grocery truck came in and we all worked together to put it away. They were still working on it when I left.

I got home about 4:30ish, and came home, sat down for maybe 30 minutes and then got to cooking. I was smart and came home for my lunch break at 11:30 and put the turkey in the oven. Ty made a pineapple upside down cake and I made a Pecan Pie and a Pumpkin Pie. I finished out the side dishes with dressing, mashed potatoes, gravy, candied sweet potatoes, and my family’s favorite, corn souffle. It isn’t really a souffle, but that is what my friend called it when I got the recipe from her when I still lived in Nashville.

It was nice to have the family all around the dinner table together, we laughed and joked and talked and had a great meal. No one got seconds, we were all full by the time we finished our first plates. It was funny because I made my plate smaller deliberately to keep myself from completely over eating. I am proud of myself for that too! I decided that if I am going to splurge on the type of food I am going to eat at the holidays, I cannot splurge on the portions as well. I still have weight from the twins left to lose!

All and all, I feel really blessed. I am thankful for all of the blessings that have came into my life over the last year, and I look forward to all that we will receive in the future. I truly hope that everyone had a good holiday and feels as blessed as I do.
